About this wine…
Our first sparkling release - a traditional method rosé. This is a single vineyard wine, a pure expression of Otium Estate - made from a blend of Pinot Noir 60%, Pinot Meunier 38% and Chardonnay 2%.
Harvested from the Otium vines, the grapes are pressed swiftly after harvest, and fermented in stainless steel at a cool temperature to preserve the delicate floral and fresh berry flavour characters.
A small portion was fermented in old oak barrels to add a touch of texture and additional layers of flavour. The varieties are then blended in the spring after harvest and bottled in their final bottle, with an addition of yeast and sugar to trigger a second fermentation in bottle.
This Fermentation allows the wine to remain in contact with the yeast ‘lees’ which gives it the distinctive traditional method characters of toasted sourdough bread or toast. It remained on lees for two years, before being disgorged, and allowed some months on cork before release.
